How to Grill Seafood?

How to Grill Seafood?

So here’s a step-by-step guide for grilling the perfect fish every time: 

  1. Preheat your grill on medium heat or about 175°C. 
  2. Clean and oil your grill grate so that the fish won’t stick when placed on top of it.  
  3. Place your seasoned fillets directly onto the preheated grill grate and close the lid of the grill if available. Grill for 4 minutes per side, flipping once halfway through cooking time until cooked through. The internal temperature should reach 63°C.  
  4. Remove from heat and serve with desired sides or sauces.

Grilling a Squid or Octopus

  1. Begin by selecting a fresh squid or octopus for grilling. Choose one that has a bright colour and feels firm to the touch, indicating its freshness. 
  2. If your squid or octopus is frozen, thaw it in the refrigerator overnight before beginning the grilling process.
  3. Prepare the seafood for grilling by cutting the tentacles off and discarding them. Then slice the body into 1cm thick rings.
  4. Marinate your ingredients in a mixture of olive oil, salt, pepper, garlic and any other herbs or spices you’d like. Allow the squid and octopus to marinate for at least an hour.
  5. Preheat your grill to medium-high heat and brush it with a generous amount of olive oil. Once the grill is hot, place the squid and octopus pieces onto it.
  6. Grill the squid or octopus for about 2-4 minutes on each side, flipping once during the process. You’ll know when your squid or octopus is done when it’s lightly browned and charred around the edges. 
  7. Remove the squid or octopus from the grill and let it cool before serving. Enjoy your grilled squid or octopus as a main dish, appetiser or salad topping. 

Grilling a Shellfish

  1. Prepare the shellfish by inspecting it for any signs of damage. Discard any that have open shells, have cracked shells or appear to be discoloured.
  2. Rinse the shellfish in cold water. Some recipes will call for soaking the shellfish in saltwater for a few minutes prior to cooking.
  3. Prepare the grill – charcoal, gas or electric. If using a charcoal grill, the coals should be spread evenly to ensure even cooking. If using a gas or electric grill, preheat it and make sure the grates are clean and lightly oiled before placing the shellfish on the grill.
  4. Grill the shellfish by placing the shellfish on the hot grates. Grill for 2-3 minutes per side or until the shells begin to open and the flesh is opaque in colour. It is important to not overcook shellfish as it can become rubbery and tough.
  5. Serve immediately. Enjoy your grilled shellfish with a side of lemon wedges, melted butter or your favourite dipping sauce.
